THIS IS THE REAL DEAL
This is the real deal. They bring the ingredients in from El Paso. The owner learned to cook at El Chico’s in Texas. No more make believe enchiladas. They even got Tacos al Pastor, refried beans, soft corn tortillas, tamales, corn bread, fajitas.....the whole nine yards. Good Margaritas too. This aint no fast food, so be prepared to sit and wait on it, but it’s worth it. Oh, one more thing, if you miss Texas Style burgers, try the Cantina Burger, or the Angus
Burger, (WOW) and the Chili is second to none. They open at 3pm daily, and close the kitchen at 10pm.

Do not use a Taxi if the Taxi Driver does not turn on his meter. It's the law here for a Taxi to turn on the meter. So, insist that the meter be on. Tell the driver. "Turn on the Meter." If he offers you a "Special Rate" tell him "No, turn on the meter, this is not my first trip here."
Get another Taxi, if he does not comply.
He is required by law to always operate on the meter. Special Rate, means Severe Overcharge. And don't ever ride in a Taxi without a meter! Authentic Taxis are required by law to have meters.

Melon In The Market!
Here in Cebu, we grow lots of watermelons. Most people don’t have the slightest idea of how to pick the juiciest melon in the market. My daddy, and his daddy, grew watermelons, and they taught me how to select a good juicy one. Let me teach it to you…..First, decide the size of melon you want. You can only judge equal sized melons against each other. The rules for judging are:
Weight, Yellow, Thump.
1. A juicy melon is over 90% water. So it should be heavier than its competition.
2. The bottom of the melon should be a creamy yellow color. If the bottom is white, it was picked too soon.
3. Now place it on a flat counter and give it a good thump with your palm. Water is a great conductor for sound. The more hollow the sound, the sweeter and juicier the melon! Find the perfect one, and leave it overnight in the Fridge, and enjoy it at the beach in Mactan!
